Happy Spring from the gang at Michaels! Season is in full swing and we are as busy as ever!
 
As always there are some big events coming up at Michaels. May16th is our 4th Annual Dinner to benefit the YMCA of Key West. Last year we raised over $10,000.00 thanks to our dear friends who came to lend support. This year we will have celebrity servers! A host of local celebs will be working hard for their tips. The server with the most tips at the end of the night will win a fabulous prize. Tickets will be $125/person and can be purchased by calling 295-YMCA. It supports a great cause and is great fun!
 
We are also looking forward to being a part of this year’s Taste of Key West to benefit AIDS Help, Inc. The event held in April is always a local’s favorite and is sure to please.
June 6th is our annual Red Ribbon Affair dinner to benefit AIDS Help, Inc. Stay tuned for more details.

A word about beef
Did you know that only 1% of 1000 pounds of steer can be graded USDA Prime? Prime beef is the finest beef you can get and is all that we serve at Michaels Restaurant. A recent article in the Chicago Sun Times quotes Bobby Hatoff, the owner of Allen brothers in Chicago. Asked about Black Angus beef he says, "A myth...over 99% of that category is actually US Choice, one grade below Prime. "

Recipe for spring 2005
   
 


Seafood Crepes
   
 
Makes 6 CREPES
   
       
  6 crepe shells    
  12 -16/20 count shrimp    
  6 -16/20 count scallops    
  6 oz fresh fish (grouper, mahi mahi or snapper)    
  12 oz jumbo lump crab meat    
  Minced Garlic    
  1 teaspoon fresh thyme    
  Olive oil    
  6 oz cognac (brandy)    
       
  SAUCE    
  2 cups heavy cream    
  1/2 cup seafood stack or bouillon    
  Butter    
  Flour    
       
  Sauté shrimp, scallops and fish in a tablespoon of olive oil, garlic and thyme    
  Flambé with cognac    
  Reduce liquid and drain off excess    
  Set mixture aside    
       
  SAUCE    
  Mix heavy cream and seafood stock    
  Salt and pepper to taste    
  Reduce mixture by 1/2    
  Thickens with a roux (2 tablespoons of butter and 2 tablespoons of flour)    
       
  Add small amount of sauce to seafood mixture and divide evenly and roll into crepe shells    
  Ladle remaining sauce over crepe and top with crab meat    
       
  Bake in a 400 degree oven for 6 minutes    
       
  ENJOY
